Oregano is a flowering plant in the mint family, native to western and southwestern Eurasia and the Mediterranean region, and an important culinary herb. It is sometimes called wild marjoram. Its flavorful leaves have an aromatic, warm, and slightly bitter taste that many people associate with pizza.

It is best known now as the staple herb of Italian cuisine. Italians use it frequently with roasted, fried, or grilled vegetables, meat, and fish, and it combines well with spicy foods popular in southern Italy. The herb is widely used in cuisines of the Mediterranean Basin, the Philippines, and Latin America.

In Turkish cuisine, the plant often flavors meat, especially mutton and lamb. You can find it in barbecue and kebab restaurants as a condiment, together with paprika, salt, and pepper.

Greeks use dried and ground oregano to add flavor to Greek salad, and usually add it to the lemonolive oil sauce that accompanies fish or meat grills and casseroles.

Store fresh in the refrigerator wrapped in a slightly damp paper towel. You can also freeze it, either whole or chopped, in airtight containers. You can also freeze the herb in ice cube trays in either water or stock; add these ice cubes to soups or stews during cooking. Dried leafs keeps well in a tightly sealed glass container in a cool, dark, and dry place for about six months.

Try these ideas to enjoy the herb in your favorite dishes:

  • Next time you enjoy a slice of pizza, garnish it with some fresh leafs.
  • It goes beautifully with sautéed mushrooms and onions.
  • Add a few sprigs of fresh oregano to a container of olive oil to infuse the oil with the essence of the herb.
  • Fresh leafs makes an aromatic addition to omelets and frittatas.
  • Sprinkle some chopped oregano onto homemade garlic bread.
  • Add oregano to salad dressings.
